Tuna and Vegetable Balls

These are super versatile. Take as a share plate or have several balls with a side salad for a meal. Great for an entree as well.


  • 1 cup cooked rice
  • ¼ cup low fat grated cheese
  • 185g can tuna, drained and flaked
  • ½ cup carrot, grated
  • ½ cup allowed vegetables finely chopped [or ½ cup zucchini grated]
  • 1 egg, lightly beaten
  • Gluten free bread crumbs or rice crumbs for the topping


  • Combine all ingredients and roll into walnut sized balls. Roll in crumbs to coat
  • Heat some oil in a pan and gently sauté until golden brown on all sides
  • Drain on absorbent paper and serve warm or cold

Makes 12 balls
