Carrot Soup

This easy, delicious and quick to make low fodmap carrot soup is an excellent addition to any meal or nice in place of a cup of tea during the day. It is low fat, low calorie and high in fibre


  • 1kg carrots
  • 750ml stock using Massel 7's low fodmap stock cubes
  • 2 teaspoons low fat margarine
  • Salt and Pepper


Grate the carrots. In a medium saucepan melt the margarine and added the grated carrots over low to medium heat. Simmer with the lid on for 20 minutes to allow the carrots to caramelise.

Add the stock and season with salt and pepper. Be sure to scrape the bottom of the saucepan with a spoon to dislodge any caramelised carrots as this adds to the flavour. Simmer for another 20 minutes.

Process in a blender. Add extra water if a thinner texture is desired.
