Vegetable Muffins

These low carb, low fat, low fodmap veggie muffins are super easy and super quick to make. Have one for a snack or team them up with a side salad or vegetable soup for a quick, light meal


  • 1 red capsicum
  • 2 tomatoes
  • Half cup chopped spinach
  • 1 bunch chopped basil leaves
  • 6 eggs
  • 6 egg whites
  • ¼ cup low fat grated cheese
  • Salt and pepper to taste


  1. Pre heat oven to 180°C and spray a 12 capacity muffin pan
  2. Whisk eggs and egg whites in a large bowl
  3. Chop the capsicum, tomatoes, basil and spinach and mix into the eggs. Add salt and pepper to taste
  4. Pour mixture into muffin tray and sprinkle with cheese
  5. Bake for 25 – 30 minutes
