Vanilla Cake / Muffins
Recipes > Sweet Muffins CakesThese are my go to muffins when the family is craving a dessert. They taste like scones. They are light and fluffy and delicious. These literally take minutes to prepare and just 20 minutes in the oven.
Ingredients
- ½ cup caster sugar
- 170g margarine
- 3 eggs
- 100ml lactose free milk
- 1 ½ cups gluten free self raising flour
- 1/3 cup cornflour
Method
- Preheat oven to 180°C degrees or 160°C for a fan-forced oven
- Using an electric mixer, mix the caster sugar, margarine, 3 eggs and lactose free milk until well combined. Add the flours and beat for 2 to 3 minutes.
- Bake for 30 minutes for a large cake or 20 minutes for 12 muffins [or until a toothpick comes out clean].
