Banana Muffins

These muffins make for a terrific snack. They will keep well in the fridge or freeze individually in the freezer.


  • 2 cups gluten free self raising flour, sifted
  • 2 eggs, lightly whisked
  • ½ cup sugar
  • 200g lactose free yoghurt
  • 250ml lactose free milk
  • 2 medium bananas, mashed


  • Combine sifted flour and sugar in a bowl.
  • In a separate bowl combine the bananas, milk, yoghurt and eggs and add to the flour mixture.
  • Fill a lightly greased muffin tray until ¾ full.
  • Bake at 180°C degrees for 20 to 25 minutes or until a toothpick comes out clean.
