Banana Berry Loaf

This makes for a terrific morning or afternoon snack or served warm with a scoop of lactose free ice-cream or yoghurt for dessert.


  • 2 cups gluten free flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • 1 ½ teaspoons bicarb soda
  • 3 ripe bananas
  • ½ cup oil
  • 1 tablespoon skim milk
  • 2 eggs, lightly beaten
  • 1 cup fresh or frozen raspberries or Strawberries


  1. Preheat oven to 180°C, line a loaf tin with baking paper
  2. Mix the flour, sugar, baking powder and bicarb soda in a large bowl
  3. Whisk the bananas, oil, milk and eggs in a separate bowl
  4. Add both bowls and stir gently until combined. Add berries and pour into loaf tin
  5. Bake for one hour or until skewer comes out clean. Leave cake to cool in tin for a few minutes and then turn out.
