Pumpkin Snack Bites

Whilst these are classified as a sweet snack they are more on the savoury side. If you are wanting a sweeter outcome add an extra tablespoon of rice syrup and one teaspoon of vanilla essence.

Ingredients

  • ½ cup of pumpkin pureed
  • ½ cup of peanut butter or half a cup of an allowed nut butter
  • 1 medium banana, mashed
  • ½ cup of quinoa flakes
  • 1 egg
  • 1 tablespoon of rice syrup or pure maple syrup
  • 1 teaspoon of vanilla extract
  • ¼ cup of chocolate chips

Method

  1. Preheat oven to 180. In a large mixing bowl, combine all of the ingredients and mix well.
  • Spoon into greased mini muffin tin pans. Bake for 20 minutes.

Note:

These are not a super sweet snack but if that's what you're looking for add an extra tablespoon of rice syrup and ½ teaspoon of vanilla.
