Pumpkin Snack Bites
Recipes > Sweet Biscuits and SnacksWhilst these are classified as a sweet snack they are more on the savoury side. If you are wanting a sweeter outcome add an extra tablespoon of rice syrup and one teaspoon of vanilla essence.
Ingredients
- ½ cup of pumpkin pureed
- ½ cup of peanut butter or half a cup of an allowed nut butter
- 1 medium banana, mashed
- ½ cup of quinoa flakes
- 1 egg
- 1 tablespoon of rice syrup or pure maple syrup
- 1 teaspoon of vanilla extract
- ¼ cup of chocolate chips
Method
- Preheat oven to 180. In a large mixing bowl, combine all of the ingredients and mix well.
- Spoon into greased mini muffin tin pans. Bake for 20 minutes.
Note:
These are not a super sweet snack but if that's what you're looking for add an extra tablespoon of rice syrup and ½ teaspoon of vanilla.
