No Bake Peanut Bars

These no bake, low fodmap peanut bars make for a delicious snack when you are craving something sweet. They keep well in the fridge

Ingredients

  • ½ cup caster sugar
  • ½ cup rice syrup
  • ½ cup peanut butter
  • 3 cups Freedom Foods Rice Puffs
  • 100g dark chocolate, chopped

Method

  • Line a 30cm x 20cm pan with non-stick baking paper.
  • Place the sugar and rice syrup in a small saucepan and stir over low heat until sugar dissolves. Add the peanut butter whilst stirring until smooth.
  • In a large bowl, add the rice bubbles and stir in the sugar mixture. Press the mixture into the lined pan.
  • Place the chocolate in a heatproof bowl over a saucepan of simmering water. Stir until melted.
  • Transfer the chocolate to a plastic bag, snip the corner and pipe over the slice. Cover with plastic and fridge for 1 hour or until set.
