No Bake, Seed Slice

This very simple to make, no bake low fat, low Fodmap seed slice makes a delicious morning tea, afternoon tea or supper. Keep in the fridge for up to 4 days.

Ingredients

  • ¾ cup pepitas
  • 1 cup puffed rice
  • ½ cup puffed millet
  • ½ cup chopped walnuts
  • ¼ cup seeds of choice such as sesame seeds or linseeds
  • ¼ cup dark chocolate nibs
  • Approx. 2 tablespoons rice malt syrup – judge by wetness of mixture

Method

  • Place all ingredients, except for the rice malt syrup, into a bowl and mix together. Slowly add the rice syrup but ensure the mixture doesn’t get too wet – just use enough rice syrup for the mixture to hold together.
  • Press into a lined tray and place in the fridge to set.
  • Cut into squares and serve.
