Macadamia Cookies

Ingredients
- 70g macadamia nuts, finely diced
- 5 macadamia nuts, halved
- 30g margarine, melted
- ¼ cup icing sugar
- ½ teaspoon vanilla
- ½ cup gluten free plain flour
Method
- Mix together the margarine, sifted icing sugar and vanilla until light and fluffy, add the chopped nuts and stir in the sifted flour.
- Shape a teaspoon of the mixture into 10 balls and place onto a greased oven tray at least 3 cm apart.
- Press half a macadamia nut into each ball and bake in a moderate oven for approximately 10 minutes or until golden brown.
