Macadamia Cookies

These make a terrific cookie to take for a share plate. They look very appetising and no one would know they are gluten free. A delicious snack for morning tea or afternoon tea


  • 70g macadamia nuts, finely diced
  • 5 macadamia nuts, halved
  • 30g margarine, melted
  • ¼ cup icing sugar
  • ½ teaspoon vanilla
  • ½ cup gluten free plain flour


  • Mix together the margarine, sifted icing sugar and vanilla until light and fluffy, add the chopped nuts and stir in the sifted flour.
  • Shape a teaspoon of the mixture into 10 balls and place onto a greased oven tray at least 3 cm apart.
  • Press half a macadamia nut into each ball and bake in a moderate oven for approximately 10 minutes or until golden brown.
