Low Fat Muesli Bars

These super simple, low fat, low fodmap muesli bars make for a terrific snack for morning tea or afternoon tea.


  • 3 cups any low fodmap muesli
  • ¾ cup gluten free plain flour
  • 1 tsp mixed spice
  • 2 eggs
  • ½ cup rice syrup [heat for 10 seconds in microwave to mix easier]


  • Mix muesli and spice. Add eggs and heated rice syrup. Mix thoroughly until all combined and sticky. Mixture will be quite moist.
  • Line a lamington tray with baking paper and press mixture into tray to 1 ½ cm thick. Bake in moderate oven for 30 minutes or until golden brown.
  • Slice when warm, however remove from tray when cool.
