Quinoa Tabbouleh

This is a delicious one bowl salad that takes just minutes to make. Double the ingredients for a larger serve to take as a share plate. For a complete lunch add a tin of fish to one serve to make a delicious, high protein salad.

Ingredients

  • 2 cups cooked white quinoa
  • Handful flat leaf parsley, chopped
  • Handful fresh mint, chopped
  • 2 large handfuls of baby spinach
  • Green tips only from 1 spring onion
  • 1 cup cherry tomatoes, halved
  • 1 small Lebanese cucumber, sliced into cubes
  • 2 tablespoons of lemon juice
  • 1 tablespoon of olive oil
  • Sea salt and pepper to taste

Method

  • Combine all ingredients then season to taste.
