Quinoa Tabbouleh
Recipes > Soups / SaladsThis is a delicious one bowl salad that takes just minutes to make. Double the ingredients for a larger serve to take as a share plate. For a complete lunch add a tin of fish to one serve to make a delicious, high protein salad.
Ingredients
- 2 cups cooked white quinoa
- Handful flat leaf parsley, chopped
- Handful fresh mint, chopped
- 2 large handfuls of baby spinach
- Green tips only from 1 spring onion
- 1 cup cherry tomatoes, halved
- 1 small Lebanese cucumber, sliced into cubes
- 2 tablespoons of lemon juice
- 1 tablespoon of olive oil
- Sea salt and pepper to taste
Method
- Combine all ingredients then season to taste.
