Carb Free, Chicken Noodle Soup
Recipes > Soups / SaladsThis delicious, vegetable rich chicken noodle soup makes for a terrific lunch or dinner. This is a thick, hearty soup great on a cold winter's night. It is not only low fodmap it is also low fat and low fodmap, dairy free and gluten free.
Ingredients
- 4 to 5 cups allowed cooked vegetables such as pumpkin, green beans, zucchini cut into large chunks
- 3 carrots, cooked, sliced thickly
- 500g chicken, cooked and cut into large chunks
- 8 cups prepared chicken stock – use Massel 7’s chicken stock cubes
- 1 pkt of zucchini noodles or 1 pkt Konjac Noodles
- Salt and pepper to taste
Method
- Place the stock into a saucepan and add the cooked vegetables, cooked chicken and noodles. Season and bring to the boil and serve once warmed through.
