Vegetable No Carb Muffins

A terrific low carb, low fodmap, low fat high protein muffin perfect for a meal served with a side of salad or veggies or for a filling and appetite suppressing afternoon snack. Ready in under 30 minutes.

Ingredients

  • 1 red capsicum
  • 2 tomatoes
  • Half cup chopped spinach
  • 1 bunch chopped basil leaves
  • 6 eggs
  • 6 egg whites
  • ¼ cup low fat grated cheese
  • Salt and pepper to taste

Method

  1. Pre heat oven to 180°C and spray a 12 capacity muffin pan
  2. Whisk eggs and egg whites in a large bowl
  3. Chop the capsicum, tomatoes, basil and spinach and mix into the eggs. Add salt and pepper to taste
  4. Pour mixture into muffin tray and sprinkle with cheese
  5. Bake for 25 – 30 minutes
