Vegetable Muffins
Recipes > Smaller MealsThese low carb, low fat, low fodmap veggie muffins are super easy and super quick to make. Have one for a snack or team them up with a side salad or vegetable soup for a quick, light meal
Ingredients
- 1 red capsicum
- 2 tomatoes
- Half cup chopped spinach
- 1 bunch chopped basil leaves
- 6 eggs
- 6 egg whites
- ¼ cup low fat grated cheese
- Salt and pepper to taste
Method
- Pre heat oven to 180°C and spray a 12 capacity muffin pan
- Whisk eggs and egg whites in a large bowl
- Chop the capsicum, tomatoes, basil and spinach and mix into the eggs. Add salt and pepper to taste
- Pour mixture into muffin tray and sprinkle with cheese
- Bake for 25 – 30 minutes
