Quick Tuna Pasta

Ingredients
- 100g dried gluten free pasta spirals
- ½ Lebanese cucumber
- ½ red capsicum, chopped
- 1 small tomato, chopped
- 95g tuna dried and flaked
- 2 tsp olive oil
- 2 tsp lemon juice
Method
- Cook pasta until just tender. Run under cold water to stop cooking process.
- Cut cucumber into quarters length ways and thinly slice. Cut tomato into slices.
- Combine all ingredients and serve.
