Potato Bake

  • 4-5 medium potatoes [approx. 700g]
  • 4 slices bacon or ham, finely diced
  • 1 tomato, diced
  • ½ cup grated low fat cheese
  • 1 cup lactose free cream
  • Salt and pepper


  • Leaving skin on, cut the potatoes into large chunks – approx. 4-5cm. Microwave or boil until just becoming tender on the outside. Drain and tip into a prepared baking dish.
  • Sprinkle the bacon over the potatoes followed by the tomato and cheese. Pour the cream evenly over the cheese and season with salt and pepper.
  • Bake at 180°C for 30-40 minutes until golden
