Smoked Chicken Pasta

This delicious, low carb, low fodmap, low fat meal will suit everyone's tastes. Great for a lunch or dinner it is high in fibre and will keep you feeling fuller for longer.


  • 500g zucchini noodles or Konjac Noodles
  • 1 teaspoon olive oil
  • 2 teaspoons garlic infused oil
  • 1 x 200g fillet smoked chicken sliced
  • 2 large handfuls baby spinach leaves
  • 2 tablespoons pine nuts
  • ¼ cup grated parmesan
  • salt and pepper


If using Konjac noodles, rinse and drain. Add the teaspoon of olive oil to fry pan and add the Konjac or zucchini noodles and heat through. Remove from heat, cover to keep warm and set aside.

Heat the garlic infused oil in fry pan and sauté chicken, spinach and pine nuts until spinach has wilted and the chicken and pine nuts are golden brown. Add the pasta and parmesan cheese and toss over medium heat until the cheese has melted. Season to taste.
