Orange and Ginger Glazed Chicken

This low fat, low carb, low fodmap healthy dish is a delicious way to serve chicken. The entire family will enjoy this nutritious, high protein dish.


  • 1 tablespoon olive oil
  • 2 x 250 g chicken breast fillets, cut length-ways to make 4 x 125g fillets
  • 5 cm piece fresh ginger, shredded
  • 2 teaspoons freshly grated orange zest
  • ¼ cup fresh orange juice
  • ¼ cup Massell 7's chicken stock
  • 2 teaspoons rice syrup


  • Heat the oil in a large non-stick frying pan over high heat. Cook the chicken for 2-3 min on each side or until golden. Transfer to plate and cover to keep warm.
  • Return the pan to medium heat. Cook the ginger, stirring for 30 seconds. Add the orange zest, orange juice, chicken stock and rice syrup. Bring to the boil and simmer for 3-4 minutes or until the sauce is reduced by half. Drizzle the sauce over.
  • Serve on zucchini noodles or with mashed pumpkin for a complete low carbohydrate meal
