Mashed Potato Muffins

These simple to make low fat, low Fodmap mashed potato muffins make a terrific accompaniment to a meal or great for a snack. These can be consumed warmed in the microwave or cooled straight from the fridge.

Ingredients

  • 2 cups mashed potato
  • 3 large eggs, beaten
  • 3/4 cup low fat shredded cheese
  • 1/4 cup diced ham or chicken
  • 1/4 cup chives, chopped
  • Salt and Pepper to taste
  • 2 tablespoons Parmesan cheese

Method

Pre-heat oven to 180°C
Combine the mashed potatoes, eggs, cheese ham and chives and season with salt and pepper
Grease a muffin pan and spread mixture evenly between the muffin cups
Bake for 30 minutes or until golden brown
Cool for 5 minutes before serving
Can be stored in the fridge for up to 3 days or frozen individually for up to 3 months
