Chicken and Zucchini Noodle Pasta

This easy, delicious dinner is a perfect weight loss, filling meal that the entire family will enjoy and will be ready in just minutes. This dish is low carb, low fat and high fibre. You can swap the zucchini noodles for carrot noodles, pumpkin noodles or konjac noodles


  • 500g zucchini noodles
  • 1 teaspoon olive oil
  • 1 teaspoon garlic infused oil
  • 200g smoked chicken fillet, sliced
  • 2 handfuls baby spinach leaves
  • 2 tablespoons pine nuts
  • 2 tablespoons Parmesan cheese
  • Salt and pepper


  • Add the teaspoon of olive oil to a fry pan and add the zucchini noodles and heat through. Remove from heat, cover to keep warm and set aside.
  • Heat the garlic infused oil in fry pan and sauté chicken, spinach and pine nuts until spinach has wilted and the chicken and pine nuts are golden brown. Add the zucchini noodles and Parmesan cheese and toss over medium heat until the cheese has melted. Season with salt and pepper to taste.
