Baked Parmesan Crusted Chicken

This super easy, low fat, low fodmap chicken dish is one of my family's favourite meals. Ready in under 30 minutes with minimal ingredients it is my go to meal to cook after a busy day. Team with a side salad or cooked veggies.


  • 2/3rd cup grated Parmesan cheese
  • 3 tablespoons margarine, melted
  • 2 tablespoons [very] finely chopped fresh chives
  • 4 boneless, skinless chicken breasts


  • Preheat the oven to 180°C degrees
  • Combine the cheese and chives.
  • Dip the chicken in the margarine and coat with the cheese and chives mixture.
  • Place in a greased oven proof baking dish and sprinkle any remaining cheese mixture and margarine over the top.
  • Bake uncovered for 20 to 30 minutes [depending on size of chicken breasts] or until the chicken is cooked.
