Egg White Quiches.

These delicious, low fodmap, low fat, low carb mini quiches are terrific for a snack or great for a meal served with a side salad. Make ahead of time and freeze individually. Simply microwave and serve.


  • 2 cups baby spinach
  • 12 egg whites [I use Puregg White Mix]
  • 1 tsp dried basil
  • 6 tbsp shredded low fat cheese
  • ¾ cup diced ham or chicken or any cooked vegetable
  • Salt and pepper to taste
  1. Pre-heat oven to 180° and coat a muffin pan with oil spray.
  2. Cook the spinach until wilted – about 3 minutes. Remove from heat
  3. In a large bowl whisk the egg whites until light and frothy – about 2 minutes.
  4. Whisk in the basil and season with salt and pepper. Stir in all other ingredients.
  5. Divide between the muffin cups and bake for 20 to 30 minutes depending on the size of the muffins. Cool before serving.
