Low Carb Chicken Casserole

This is a super healthy meal that the entire family will enjoy. Ready in under 25 minutes it is low fodmap, low carb, low fat and low calorie whilst being high in protein and fibre. A very nutritious, filling meal.

Ingredients

  • 2 boneless chicken breasts                         
  • 2 teaspoons olive oil
  • 1 teaspoon garlic infused oil
  • Dash salt and pepper
  • 1 small zucchini
  • 1 medium tomato diced
  • ½ tsp basil
  • ½ tsp oregano
  • ½ cup low fat shredded cheese

Method

  1. Butterfly slice each chicken piece in half to make 4 thin pieces
  2. Season with salt and pepper and brown on each side in the garlic oil and olive oil for about 2 to 3 minutes per side. Place in a medium baking dish
  3. Sauté the zucchini in the same pan until soft. Add diced tomato, basil and oregano and season with salt and pepper. Cook an additional 2 minutes then pour over chicken
  4. Bake in the oven at 180° for 20 minutes. Top with the cheese and bake for a further 5 minutes.
