Chicken Bake

This is a quick, easy low fat and low fodmap meal ready in under 30 minutes. Great for the whole family to enjoy.

Ingredients

  • 1 kg potatoes peeled and diced
  • 3 tablespoons reduced fat margarine
  • ¼ cup lactose free skim milk, hot
  • 1 cup diced carrot
  • 250g cooked skinless chicken breast diced
  • ½ cup grated reduced fat cheese

Method

  • Preheat oven to 200°C. Spray an oven proof dish with oil spray.
  • Boil potatoes then mash with spread and milk until smooth
  • Cook carrots and add to potato mixture. Add chicken and combine
  • Spoon mixture into prepared dish and top with cheese and bake for 25 minutes
