Chicken Bake

Ingredients
- 1 kg potatoes peeled and diced
- 3 tablespoons reduced fat margarine
- ¼ cup lactose free skim milk, hot
- 1 cup diced carrot
- 250g cooked skinless chicken breast diced
- ½ cup grated reduced fat cheese
Method
- Preheat oven to 200°C. Spray an oven proof dish with oil spray.
- Boil potatoes then mash with spread and milk until smooth
- Cook carrots and add to potato mixture. Add chicken and combine
- Spoon mixture into prepared dish and top with cheese and bake for 25 minutes
