Carbonara Pasta

Carbonara pasta is typically a very high fat meal. This dish uses 3 egg yolks to serve two people making it a very low fat carbonara dish. Very simple to make it is low fodmap

Ingredients

  • 100-200g gluten-free pasta
  • 100-150g lean bacon or ham
  • 3 egg yolks
  • Black pepper

Method

  1. Cook the pasta according to packet instructions. Drain and save some of the cooking water.
  2. Stir the egg yolks and the Parmesan cheese together with a fork and add some black pepper. 
  3. Cook the bacon for about 4 minutes in a frying pan then add the pasta, stirring well.
  4. Take the pan off the heat and add a splash of cooking water to the pasta. Add the egg mixture to the pasta. Stir this together well and add some more black pepper. Because the pan is still warm, but not too hot, the egg mixture will cook slowly instead of turning the eggs into scrambled eggs. Add a bit more cooking water if necessary. Your pasta carbonara is done when you get a beautiful glossy pasta.
  5. Serve the pasta with some more parmesan and black pepper
