Beef & Veg Stew

Ingredients
- 500g lean beef, diced
- 500g pumpkin, peeled and diced
- 4 carrots, peeled and diced
- 2 tablespoons dry mustard powder
- 1 teaspoon garlic infused oil
- 3 cups made up Massel 7’s beef stock [vegetable or beef]
- 1 cup spinach
- 1 cup green beans
Method
- Cook beef in garlic oil until brown
- Add remaining ingredients except spinach and beans
- Bring to the boil and reduce heat and simmer for 35 minutes until pumpkin is tender. Add more liquid if required.
- Add spinach and beans and cook until beans cooked.
Serve on zucchini noodles or konjac noodles
