Beef & Veg Stew

This carb free, low fat dinner is a complete meal and is just as nice for lunch the next day. Serve on zucchini noodles or konjac noodles for an even more filling meal.

Serves 4
Ingredients

  • 500g lean beef, diced
  • 500g pumpkin, peeled and diced
  • 4 carrots, peeled and diced
  • 2 tablespoons dry mustard powder
  • 1 teaspoon garlic infused oil
  • 3 cups made up Massel 7’s beef stock [vegetable or beef]
  • 1 cup spinach
  • 1 cup green beans


Method

  1. Cook beef in garlic oil until brown
  2. Add remaining ingredients except spinach and beans
  3. Bring to the boil and reduce heat and simmer for 35 minutes until pumpkin is tender. Add more liquid if required.
  4. Add spinach and beans and cook until beans cooked.

Serve on zucchini noodles or konjac noodles
