Strawberry Baked Custard

This is a low fat, low fodmap healthy dessert delicious served warm or cold.


  • 10 strawberries, washed and hulled
  • 2 teaspoons gluten free self-raising flour
  • 1 teaspoon caster sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • ½ cup lactose free milk or rice milk


Pre-heat oven to 170 C and spray 2 half cup capacity dishes with cooking spray. Arrange the strawberries over base of dish with hulled top down [so they stand in dish].
Put the flour, sugar, egg and vanilla essence in a small bowl and whisk until combined. Gradually whisk in the milk. Pour mixture through a fine sieve and over the strawberries. Bake custards for 20 to 25 minutes or until set and golden brown. Cover after 15 minutes to prevent top burning.
