Golden Syrup Puddings

These low fodmap golden syrup puddings take me back to my childhood when we would have this every Friday night. This is a delicious treat dessert that everyone will love and no-one will know it is gluten free.

Ingredients

  • 125g unsalted butter
  • ½ cup golden syrup
  • 1 cup fine rice flour
  • ½ cup maize flour
  • ½ cup potato flour
  • 1 tsp bicarb soda
  • 2 tsp baking powder
  • 1 tsp xanthan gum
  • 1 cup sugar
  • ¾ cup low fat milk
  • 1 egg
  • 2 tsp vanilla extract
  • 3 tablespoons sugar, exact

Method

  • Pre heat oven to 160 ° and grease six 1 cup capacity oven proof dishes
  • Place the butter and golden syrup in a small saucepan and stir over med-high heat until combined and butter has melted. Pour into the dishes
  • Sift the flours, bicarb, baking powder and xanthan gum three times into a large bowl [or whisk really well until combined]. Add the sugar, milk, eggs and vanilla and beat with electric beaters until well combined.
  • Dollop small balls of the batter over the golden syrup mixture into the dishes until evenly covered. Sprinkle with extra sugar and bake for 30-35 minutes or until golden and cooked through. Leave for 5 minutes before serving.
