Easy Christmas, Low Fodmap Sago Puddings

Ingredients
- ½ cup of sago
- ¼ cup of any lactose free milk
- Soak the sago in the rice milk for five hours or overnight
- 1 1/2 cups of gluten free breadcrumbs
- 2 eggs
- 1 teaspoon of bicarb soda
- 1 tablespoon of melted margarine
- ½ cup caster sugar
- 50 grams dark chocolate
Preheat oven to 180° degrees or 160° degrees fan forced.
1. After sago has finished soaking and absorbed nearly all the liquid, mix everything together in a bowl.
2. Spoon the batter into either one greased pudding bowl or six greased individual ramekins which can be submerged in a steam bath in the oven.
Steam bath- Simply find a bigger dish or tray that can be filled with boiling water until it comes halfway up the sides of the baking dish/dishes.
3. Cover dish/dishes completely with foil and cook in oven for 1 hour.
4. Serve with lactose free custard or lactose free ice-cream.
