Bread and Butter Pudding

This super easy low fat, low fodmap dessert is delicious served warm with a scoop of lactose free ice-cream.


  • 2 tablespoons low fat margarine
  • 5 slices thickly sliced GF bread
  • 2 ½ cups low fat lactose free milk or rice milk
  • 2 tablespoons GF egg custard mix


1. Preheat oven to 180°C
2. Butter the bread well and cut each slice into fours. Layer into a greased, oven-proof dish
3. Mix the milk and custard powder until all the powder dissolves. Pour over the bread.
4. Allow at least ½ hour for the bread to soak up the liquid.
5. Bake in oven until the top is golden brown.  Allow to cool and enjoy
