Banana Macadamia Ice-Cream
Recipes > DessertsThis low fodmap, low fat delicious ice-cream is perfect served by itself, in a gluten free cone or on top of some berries. Once the bananas are frozen this literally takes just minutes to make.
Ingredients
- 4 ripe bananas
- 2 tablespoons + 2 teaspoons rice syrup
- ½ cup lactose free milk
- 1 teaspoon vanilla extract
- ¼ cup macadamias finely chopped
- Pinch of salt
Method
- Slice bananas into thin slices and freeze in a single layer on a tray lined with baking paper.
In a small bowl, combine the macadamias with the 2 teaspoons of rice syrup and the salt and set aside. - Combine the frozen banana slices, the milk, the remaining rice syrup and the vanilla extract in a food processor until soft like ice-cream.
- Spoon into four bowls and sprinkle with the macadamia mixture.
