Low Carb, Cheat's Minestrone

This super quick, easy, low fat, low carb, low fodmap minestrone soup is delicious on its own or served with a protein such as a piece of chicken, fish or steak. Ready in just minutes this is a super filling dish.

Serves 4

Ingredients
820g can tomato soup
1 pkt zucchini noodles
400g frozen mixed, allowed vegetables

Method
Empty soup into a saucepan and add 1 ½ cans of water. Bring to the boil, add the vegetables, return to the boil and cook for 2 minutes. Add more water if the soup is too thick. Add the zucchini noodles. Cook for a further 2 minutes until all heated through. Serve
