Egg White Omelette in a Mug

This super quick, low carb, low fat, low fodmap dish can be teamed up with a side of salad or vegetables for a very healthy, filling, low calorie meal. Ready in just minutes.

Ingredients

  • 4 egg whites, lightly beaten
  • 2 tablespoons fully cooked ham or chicken bacon, in bite size pieces
  • 2 tablespoons fresh baby spinach, sliced
  • 2 tablespoon tomato, diced
  • 1 tablespoon cheese
  • Dash of oregano or basil, if desired
  • salt and pepper to taste, if desired

Method

  1. Lightly oil the inside of coffee mug.
  2. Toss the ingredients in the mug and stir (ingredients should fill mug about ¾ full)
  3. Pop into the microwave and cook for 1 minute. Check for doneness-- will likely need another minute of cooking time to ensure the egg is cooked and cheese is melted.
