Quinoa Breakfast Pudding

Note that this breakfast pudding needs to be soaked overnight. This low fodmap, low fat, super healthy breakfast pudding is extremely filling due to the high protein content of both the quinoa and the linseed. A very healthy start to your day. Make several batches and store in the fridge in advance.

Ingredients

  • ½ cup quinoa flakes
  • ¾ cup lactose free milk
  • 1 tablespoon linseed meal
  • 2 tablespoons rice syrup or maple syrup
  • 5 – 6 strawberries or ¼ cup blueberries

Method

  1. Place the quinoa, milk, linseed meal and syrup in a bowl, stir to combine, cover with cling wrap and fridge overnight
  2. Serve with the fruit in the morning
