Vanilla Cake / Muffins

These are my go to muffins when the family is craving a dessert. They taste like scones. They are light and fluffy and delicious. These literally take minutes to prepare and just 20 minutes in the oven.

Ingredients

  • ½ cup caster sugar
  • 170g margarine
  • 3 eggs
  • 100ml lactose free milk
  • 1 ½ cups gluten free self raising flour
  • 1/3 cup cornflour

Method

  • Preheat oven to 180°C degrees or 160°C for a fan-forced oven
  • Using an electric mixer, mix the caster sugar, margarine, 3 eggs and lactose free milk until well combined. Add the flours and beat for 2 to 3 minutes.
  • Bake for 30 minutes for a large cake or 20 minutes for 12 muffins [or until a toothpick comes out clean].
