Banana Walnut Bread

This makes a terrific alternative to the usually high fat, high calorie banana bread. This is low fodmap, low fat and gluten free and makes for a terrific morning tea or afternoon tea.

Ingredients

  • 115g margarine
  • 2 eggs
  • 1 cup sugar
  • 1 tsp vanilla essence
  • 2 cups gf plain flour
  • 2 tsp gf baking powder
  • 3 large ripe bananas
  • 1 1/3 cups walnut halves or 1 cup of ground walnuts

Method

  1. Pre-heat oven to 170°C grease and flour a bread tin
  2. Pulse the walnuts in a food processor until finely chopped and ground. Place in a separate bowl.
  3. Cream butter and sugar. Beat in mashed bananas, eggs and vanilla. In another bowl mix the flour and baking powder. Combine flour mix to banana mixture and beat until the dry ingredients are incorporated. Stir in walnuts
  4. Turn batter into prepared tin and bake for 1 hour 20 minutes or until a wooden skewer inserted
  5. Cool in cake tin for 10 minutes then turn onto a wire cooling rack before serving
