Banana Muffins

Ingredients
- 2 cups gluten free self raising flour, sifted
- 2 eggs, lightly whisked
- ½ cup sugar
- 200g lactose free yoghurt
- 250ml lactose free milk
- 2 medium bananas, mashed
Method
- Combine sifted flour and sugar in a bowl.
- In a separate bowl combine the bananas, milk, yoghurt and eggs and add to the flour mixture.
- Fill a lightly greased muffin tray until ¾ full.
- Bake at 180°C degrees for 20 to 25 minutes or until a toothpick comes out clean.
