Low Fat Muesli Bars

Ingredients
- 3 cups any low fodmap muesli
- ¾ cup gluten free plain flour
- 1 tsp mixed spice
- 2 eggs
- ½ cup rice syrup [heat for 10 seconds in microwave to mix easier]
Method
- Mix muesli and spice. Add eggs and heated rice syrup. Mix thoroughly until all combined and sticky. Mixture will be quite moist.
- Line a lamington tray with baking paper and press mixture into tray to 1 ½ cm thick. Bake in moderate oven for 30 minutes or until golden brown.
- Slice when warm, however remove from tray when cool.
