Delicious Greek Salad
Recipes > Soups / SaladsThis is my go to dish when I am told to "bring a dish". It is a very appetising looking dish and if you don't tell anyone it is gluten free they wont know!!! Also great as a side with a protein for lunch or dinner. It is low fodmap and can be made lactose free with Bio Dairy Free Feta Cheese.
Ingredients
- 250 gr gluten-free pasta
- 1 punnet cherry tomatoes
- 1 cucumber
- 150 gr black olives [optional]
- 1 ½ red capsicum
- 200 gr feta [I use Bio Cheese Dairy free feta from Woolworths]
- 4 tablespoon olive oil
- 1 tablespoon vinegar
- 1 tsp oregano
- Pepper and salt
- Boil the gluten-free pasta according to the instructions on the package and set aside to cool.
- Cut the tomatoes in wedges, the cucumber in slices and the bell pepper into thin strips. Cut the feta into cubes.
- For the dressing mix the olive oil with the vinegar and flavour with oregano, pepper and salt.
- Gently combine the pasta, salad and feta then pour over the dressing.
