Tuna & Sesame Seed Rice Salad

This recipe makes for the perfect low fat, low fodmap, super healthy lunch. Make a few batches in advance to have your lunches for the week ready to go.

Tuna & Sesame Seeds Rice Salad

Serves 2

Ingredients

  • 1 cup cooked rice
  • 1 Lebanese cucumber, chopped
  • 185g can tuna in springwater drained
  • 1 carrot finely sliced
  • 1 red capsicum chopped
  • 125g cherry tomatoes halved
  • ½ cup baby spinach chopped
  • 1 teaspoon sesame seeds
  • Zest of 1 fresh lemon – save juice for dressing
  • Black pepper for dressing

Method

  1. Combine all ingredients except lemon juice and black pepper
  2. Season with lemon juice and black pepper to taste

Variations/

  • Swap rice for one cup of cooked quinoa or cooked pasta
  • Swap tuna for chicken or red meat
