Tuna & Sesame Seeds Rice Salad
Serves 2
Ingredients
- 1 cup cooked rice
- 1 Lebanese cucumber, chopped
- 185g can tuna in springwater drained
- 1 carrot finely sliced
- 1 red capsicum chopped
- 125g cherry tomatoes halved
- ½ cup baby spinach chopped
- 1 teaspoon sesame seeds
- Zest of 1 fresh lemon – save juice for dressing
- Black pepper for dressing
Method
- Combine all ingredients except lemon juice and black pepper
- Season with lemon juice and black pepper to taste
Variations/
- Swap rice for one cup of cooked quinoa or cooked pasta
- Swap tuna for chicken or red meat
