Meatloaf
Recipes > Smaller MealsThis super easy low fat, low fodmap meatloaf is a lovely hot meal for dinner teamed with a side of vegetables or just as lovely served cold for lunch with a side salad.
Ingredients
- 500g beef mince [can use chicken or turkey mince]
- 2 eggs, lightly beaten
- 1 cup gluten free breadcrumbs
- 2 tablespoons finely chopped fresh chives
- 4 spring onions, green part only, chopped finely
- 2 carrots, grated
- 1 tomato, finely diced
Method
- Preheat oven to 180°C
- Combine all ingredients in a large bowl, season with salt and pepper and transfer to a loaf tin.
- Bake for 45 to 50 minutes.
