This super easy low fat, low fodmap meatloaf is a lovely hot meal for dinner teamed with a side of vegetables or just as lovely served cold for lunch with a side salad.

Ingredients

  • 500g beef mince [can use chicken or turkey mince]
  • 2 eggs, lightly beaten
  • 1 cup gluten free breadcrumbs
  • 2 tablespoons finely chopped fresh chives
  • 4 spring onions, green part only, chopped finely
  • 2 carrots, grated
  • 1 tomato, finely diced

Method

  • Preheat oven to 180°C
  • Combine all ingredients in a large bowl, season with salt and pepper and transfer to a loaf tin.
  • Bake for 45 to 50 minutes.
