Zucchini Slice

This easy to make zucchini slice is low fodmap, low fat and healthy. Terrific for lunch with a side salad or have a slice for afternoon tea.

Ingredients

  • 2 zucchini’s, grated
  • 10 rashers gluten free low fat bacon or ham, diced
  • ½ cup low fat cheese grated
  • ½ cup rice flour
  • ¼ cup gluten free cornflour
  • 1 tablespoon oil
  • 4 eggs + 3 egg whites, lightly beaten

Method

  • Preheat oven to 170°C
  • Combine zucchini, bacon or ham, cheese, flours, oil, eggs and seasonings in a large bowl.
  • Pour into a greased shallow baking tray and bake for 20 to 25 minutes or until firm and golden.
  • Let stand for 5 minutes before slicing.
