Zucchini Slice
Recipes > Smaller MealsThis easy to make zucchini slice is low fodmap, low fat and healthy. Terrific for lunch with a side salad or have a slice for afternoon tea.
Ingredients
- 2 zucchini’s, grated
- 10 rashers gluten free low fat bacon or ham, diced
- ½ cup low fat cheese grated
- ½ cup rice flour
- ¼ cup gluten free cornflour
- 1 tablespoon oil
- 4 eggs + 3 egg whites, lightly beaten
Method
- Preheat oven to 170°C
- Combine zucchini, bacon or ham, cheese, flours, oil, eggs and seasonings in a large bowl.
- Pour into a greased shallow baking tray and bake for 20 to 25 minutes or until firm and golden.
- Let stand for 5 minutes before slicing.
