Chicken Noodle Soup

This low fodmap, low fat chicken noodle soup is a delicious, healthy recipe just lovely on a cold winter's night, or even a hot night when the air-con is running!!

Ingredients

  • 3 medium potatoes, cut into thick cubes
  • 3 carrots, sliced thickly
  • Cup of green beans
  • 500g chicken, cooked and cut into large chunks
  • 8 cups prepared chicken stock – use Massel 7’s Chicken stock cubes
  • 250g gluten free noodles.
  • Salt and pepper to taste

Method

  • Cook the noodles as per packet directions, run under cold water to stop the cooking process and set aside.
  • Cook the potato and carrots for 10 minutes in a teaspoon of oil. Add the prepared chicken stock and simmer until the vegetables are cooked. Add the green beans and simmer until cooked. Add the chicken and simmer for a further 2 to 3 minutes. Season and add the noodles. Serve immediately.
