Ham and Noodle Omelette

This makes for a great side dish to a steak, piece of chicken or piece of fish for lunch or dinner.

Ingredients

  • 65g gluten free dried noodles
  • 1 large tomato diced
  • 60g ham, finely chopped
  • 1 small zucchini, grated
  • 3 eggs
  • 2 teaspoons oil

Method

  • Place noodles in bowl and cover with boiling water for 4 to 5 minutes, drain and return to bowl and add tomato, ham and zucchini.
  • Whisk eggs with 1 tablespoon cold water.
  • Add 1 teaspoon of oil to a pan and cook half the noodle mixture for 1 to 2 minutes until heated through. Add half over the egg mixture and cook for 2 to 3 minutes or until egg mixture almost set and place under grill for several minutes until golden and egg mixture has set.
  • Repeat with remaining noodle and egg mixture for the second serve.
