This is a low fodmap, low fat meal to serve for lunch or dinner. To make this dish carb free simply swap the gluten free pasta for zucchini noodles or konjac noodles. High in protein this meal will keep you feeling fuller for longer.

Ingredients

  • 1 cup of cooked gluten free pasta, cooled by rinsing under cold water [to stop the cooking process]. To make this dish low carb use zucchini noodles or konjac noodles
  • 5 eggs + 4 egg whites
  • ¼ cup grated cheese
  • 1 cup of cooked chicken breast or 425g can tuna, drained
  • 1 tomato, chopped
  • Handful of baby spinach leaves, chopped

Method

  • Whisk the eggs and add the cheese, chicken or tuna, tomato, spinach and pasta.
  • Pour into a non-stick fry pan and cook over low-medium heat until base sets.
  • Place under a 180°C grill to cook the top.
