Easy Quiche
Recipes > Smaller MealsThis healthy, low fat dish is super easy to make and delicious for dinner with veggies or cold the next day for lunch with a salad.
Ingredients
- 4 eggs
- 1 ½ cups of low fat milk
- ¾ cup gluten free self raising flour
- 3 rashers of bacon (I use ham)
- ½ cup low fat grated cheese
- 1 medium chopped tomato
- 1 medium tomato sliced
- Half red capsicum chopped
- 1/3 cup of low fat margarine, melted
Method
- Mix together the eggs and milk
- In a large bowl mix the flour, butter, onion and bacon. Add the egg and milk mixture and mix thoroughly. Add the capsicum and tomato here also and mix.
- Pour into a large quiche dish and arrange the sliced tomatoes on top.
- Bake in an oven at 200° Celsius for 35-45 mins (depending on your oven temp). Quiche should be set and nicely browned on top.
