Easy Quiche

This healthy, low fat dish is super easy to make and delicious for dinner with veggies or cold the next day for lunch with a salad.

Ingredients

  • 4 eggs
  • 1 ½ cups of low fat milk
  • ¾ cup gluten free self raising flour
  • 3 rashers of bacon (I use ham)
  • ½ cup low fat grated cheese
  • 1 medium chopped tomato
  • 1 medium tomato sliced
  • Half red capsicum chopped
  • 1/3 cup of low fat margarine, melted

Method

  • Mix together the eggs and milk
  • In a large bowl mix the flour, butter, onion and bacon. Add the egg and milk mixture and mix thoroughly. Add the capsicum and tomato here also and mix.
  • Pour into a large quiche dish and arrange the sliced tomatoes on top.
  • Bake in an oven at 200° Celsius for 35-45 mins (depending on your oven temp). Quiche should be set and nicely browned on top.
