Carb Free, Chicken Noodle Soup

This delicious, vegetable rich chicken noodle soup makes for a terrific lunch or dinner. This is a thick, hearty soup great on a cold winter's night. It is not only low fodmap it is also low fat and low fodmap, dairy free and gluten free.

Ingredients

  • 4 to 5 cups allowed cooked vegetables such as pumpkin, green beans, zucchini cut into large chunks
  • 3 carrots, cooked, sliced thickly
  • 500g chicken, cooked and cut into large chunks
  • 8 cups prepared chicken stock – use Massel 7’s chicken stock cubes
  • 1 pkt of zucchini noodles or 1 pkt Konjac Noodles
  • Salt and pepper to taste

Method

  • Place the stock into a saucepan and add the cooked vegetables, cooked chicken and noodles. Season and bring to the boil and serve once warmed through.
