Mixed Vegetable Frittata

This super easy low fat, low fodmap, low carb mixed vegetable frittata makes for a delicious accompaniment to any protein for a main meal or served by itself or with a side salad for a light meal. High in protein this dish will keep you feeling fuller for longer.

Ingredients

  • 1 cup cooked vegetables [I use zucchini, carrot and red capsicum]
  • 2 eggs
  • 1 egg white
  • 1/3 cup skim milk
  • 4 tablespoons of 50% reduced fat grated cheese. I use Coles Light Mozzarella
  • 1 tsp dried mixed herbs

Method

Preheat oven to 180°C.
Whisk eggs, egg white, milk and 2 tablespoons of the cheese in a bowl, add the veggies and the herbs and pour into a baking dish. Sprinkle with remaining cheese and bake for 25 minutes or until set.
