Delicious Greek Salad

This is my go to dish when I am told to "bring a dish". It is a very appetising looking dish and if you don't tell anyone it is gluten free they wont know!!! Also great as a side with a protein for lunch or dinner. It is low fodmap and can be made lactose free with Bio Dairy Free Feta Cheese.

Ingredients

  • 250 gr gluten-free pasta
  • 1 punnet cherry tomatoes
  • 1 cucumber
  • 150 gr black olives [optional]
  • 1 ½ red capsicum
  • 200 gr feta [I use Bio Cheese Dairy free feta from Woolworths]
  • 4 tablespoon olive oil
  • 1 tablespoon vinegar
  • 1 tsp oregano
  • Pepper and salt
  1. Boil the gluten-free pasta according to the instructions on the package and set aside to cool.
  2. Cut the tomatoes in wedges, the cucumber in slices and the bell pepper into thin strips. Cut the feta into cubes.
  3. For the dressing mix the olive oil with the vinegar and flavour with oregano, pepper and salt.
  4. Gently combine the pasta, salad and feta then pour over the dressing.
